At The Reverie Saigon’s Café Cardinal in March and April be taken on a tour of the finest oysters from around the world, had picked for your dining pleasure.

From here in Vietnam and from as far afield as France, Ireland and Canada, this selection offers a chance to sample many varied tastes and textures of this prized delicacy.

The Muirgen oyster, found in Ireland and France appeals to oyster enthusiasts for its sweetness and beige-coloured flesh that is nestled in a meaty jewel, providing a rare gracefulness to the palate. Meanwhile, the Baynes Sound oyster from Canada has a gentle, sugar-sweet taste with a slightly crunchy bite and is perfect for a first acquaintance.

Naturally, Vietnam is represented by the classic Fine de Claire oyster from Nha Trang and Pacific oysters from Ha Long Bay.

Apart from enjoying the oyster natural on ice, Café Cardinal will also present a hot selection of oyster favourites. You can try Rockefeller (slow baked with organic parsley, shallot and bread crumbs); Mornay (gratinated with light homemade béchamel, French gruyere cheese and white pepper); or Fabrice (steamed with chopped organic tomato, capers and olives).

Available from 1 March to 30 April, prices range from VND40,000 to VND150,000.

A journey through the world’s finest oysters
@ R&J Italian Lounge & Restaurant

At the city’s preeminent purveyor of Italian cuisine, R&J Lounge and Restaurant, in March and April, diners can experience the delights of the world’s finest oysters.

Journeying from Vietnam’s own Nha Trang and Ha Long Bay, through France and Ireland and on to the pristine shores of Canada, creating a culinary experience like no other.

The rock oyster from France, for example, has all the typical characteristics of an oyster from the bay of Mont Saint Michel with a strong taste of iodine that lingers on the palate. Meanwhile, the Baynes Sound oyster from Canada has a gentle, sugar-sweet taste with a slightly crunchy bite and is perfect for a first acquaintance.

As for the local oysters, the Fine de Claire from Nha Trang is rightly highly regarded, but the lesser known Pacific oyster from Ha Long Bay is equally noteworthy.

R&J will also be serving up hot and cold oyster dishes with its signature stylish twist. The cold selection includes oysters topped with burrata cheese, cherry tomatoes and balsamic dressing; or a daring combination of house-made lime ice cream and salmon roe.

Hot selections include Quattro formaggi (gratinated with parmigiano, pecorino, mozzarella and gorgonzola), Florentine (slow baked with spinach, pancetta and a light cream sauce) or Puttanesca (Cerignola black olives, capers and spicy tomatoes sauce).

Special fish maw menu

In March and April, Cantonese fine-dining restaurant The Royal Pavilion will be featuring a special menu of dishes highlighting fish maw.

The culinary term for the dried swim bladders of large fish such as croaker and sturgeon, it is prised for its health benefits and its ability to absorb the flavours of other ingredients. Prepared by The Royal Pavilion’s team of decorated chefs, it is sure to be a highlight of the culinary calendar.

Some of the fabulous dishes on offer include braised fish maw soup with crab meat and mashed winter melon, braised fish maw with kanto sea cucumber in abalone sauce, and braised noodles with fish maw and bbq pork in abalone sauce.

These special dishes available from 1 March to 30 April and range from VND588,000 to VND1,388,000.
